Volume Is Not Weight

A cup measures volume. Grams and scale ounces measure weight or mass. A cup of flour does not weigh the same as a cup of sugar or water, so accurate cup-to-gram conversion requires ingredient-specific information.

Using a Kitchen Scale

When a recipe specifies weight, a kitchen scale can reduce variation caused by packing an ingredient more or less tightly into a measuring cup. This is particularly useful in baking.

Fahrenheit and Celsius

To convert Fahrenheit to Celsius, subtract 32 and multiply by 5/9. To convert Celsius to Fahrenheit, multiply by 9/5 and add 32. Household ovens can vary from their selected setting.
